I’m continuing with the Downton Abbey obsession by sharing my recipe for cucumber sandwiches. (If you’re following along, I just made some Apple Charlotte for the Season 3 premiere.)
I’m think cucumber sandwiches are one of those things that every family has a recipe for. I do remember my grandma making them, and this is how she did it.
- 1 cucumber
- 1 (80z) pkg cream cheese
- 3/4 c. mayo
- 1/2 t. onion salt
- 1/2 t. garlic powder
- 1 t. onion salt
- loaf of white bread
- salt and pepper
Slice cucumber and set on a paper towel.
Mix cream cheese, mayo, and spices in the mixer.
Cut crusts off of white bread.
(I take the crusts and use them for breadcrumbs later.)
Then cut the white bread slices in half.
Spread the cream cheese mixture thinly on both slices of bread. Put cucumbers on one side, and sprinkle with salt and pepper.
Then put the other piece of bread on top, and viola! Your cucumber sandwiches are done.
