Apple-Lime-Peanut Slaw

I think I’ve mentioned before that I just adore the show Aarti Party. I love Aarti’s personality, and her recipes are outSTANDING. (That’s my hubs’ favorite word, so I thought I would use it here. LOL)

For the 4th of July weekend, I decided to make a couple of salads, and one of them was an Aarti recipe I’ve been meaning to try. Now, coleslaw is not a favorite in our house. We don’t like the mayo and cabbage combo, so I was glad to see this slaw was a little different.I had hoped it might be a nice alternative, and it was.

The recipe is very easy, and I’m happy to tell you it’s delish! The garam masala and cumin give it some depth, and the apples and limes really help make the cabbage taste more salad-y. (Salad-y is a word, right?)

Anywho, to make the dish you need a few different things, like honey, limes, and even a handful of roasted peanuts.

You mix up the lime juices, spices, olive oil, and honey in one bowl and put it aside.

 

Then, start cutting! Take two granny smith apples and slice them in matchstick size pieces. (I left the skin on for this dish.)

 

Then, slice up the cabbage. At first I tried to grate it, but that didn’t work. You want long pieces that match the size of the apples. So I just cut them instead.

 

Then you toss the cabbage, apples, and peanuts in a bowl, and add the dressing. Viola! The recipe advises that you can use Kosher salt and pepper to taste. I used 1/2 teaspoon salt and 1/4 pepper. It seemed to be the right amount, but you can adjust this based on your own taste.

 

By the way, we’re serving this with brats tonite. LOL! A little Wisconsin, a little Indian… works for me.
